Helped by it being a great vintage, the wine turned out wonderfully, with both aroma and body.\nThis Petillant also turned out quite well, and I feel that the potential of Koshu from Minami-Alps, combined with Kitani's winemaking style, is a good match.\n\nIt is prepared in stainless steel tanks like a regular white wine, but we deliberately skipped racking the lees at the juice stage.\nAfter fermentation was complete, the lees were lightly racked, then chaptalized and bottled.\n\nThe taste has a slight tannin derived from the Koshu skins, minerals, and lively acidity.\nAromas of pineapple candy, grapefruit, apricot, peach, and hard candy.\n\nPair with dishes made with pickled plum.\n\nKeiko-san's Koshu white wine is still undergoing low-temperature fermentation at 6 degrees Celsius, and both I and Keiko-san plan to release it.
