White petillant wine, 750ml, crown cap, 12.4% alc, made with Yamagata-grown Delaware grapes, natural fermentation, chaptalized, no added sulfites. This year, we were fortunate to connect with Mr. Takahashi from Yamagata. The Delaware grapes were very well-ripened, with a sugar content exceeding 20 degrees, and thanks to Yamagata's climate, the acidity was also perfect. The fact that such excellent grapes can be grown in large quantities for sale truly reminds us what a wonderful production area Yamagata is. After several hours of skin contact, the grapes were pressed, and by leaving a little lees and debourbage, we aimed for the juicy taste of the grapes themselves. We don't usually do skin contact with Delaware grapes, but this time, we intentionally tried it to extract the components of the ripe skins. It's a different vibe from previous Kitanani wines, but with just the right amount of juiciness, volume, and acidity, it's an addictive taste. We added sugar before bottling to give it effervescence. A slight sweetness can be detected (as of January 29, 2025). Pineapple, Japanese citrus, apple. The juicy aroma of Delaware grapes themselves. The aroma of fermented foods like Narazuke. Pairing: tempura of wild vegetables, dishes that highlight a slight char, shellfish.
