Schiller 2025 Cuvée Takashi

Price: ¥4,400

Red wine, 750ml, synthetic cork, 12.6% alcohol, from Katsunuma-cho, Yamanashi Prefecture, Syrah, spontaneous fermentation, sulfites added, chaptalized, 861 bottles produced

This red wine is made from Syrah grapes grown by Takashi Yano, a grape farmer in Katsunuma-cho, Yamanashi Prefecture.
Mr. Yano moved from Kyushu to Yamanashi when he was around 30, and now he is exclusively a wine grape farmer (he does not grow table grapes or make wine himself).
We are gradually compiling the story of the connection between Mr. Yano and Kitani Wine on our Note page, so please take a look if you are interested.
Approximately 20% of the grapes were fermented as whole clusters, and the rest were destemmed.
Aged in third-use barrels.
A small amount of sulfites added at bottling.

・Aroma, flavor
It has the rotundone (black pepper aroma) of Syrah, while also featuring aromas of strawberries, black cherries, and herbs like perilla, similar to Burgundy Gamay.
Medium tannins are present, followed by acidity that lingers on the finish.

・Pairing
Dishes using basil sauce (pasta, pizza, chicken, etc.), and sukiyaki.
