White wine, 750ml, 11.9% ABV, Delaware grapes from Habikino, Osaka (organic cultivation), crown cap, sulfites added, chaptalized, approximately 280 bottles produced.

Fermentation of our 2023 estate-grown Delaware stopped. We transferred it to barrels, aerating it in the hope it would restart, but it remained stubbornly dormant. Our estate vineyard's Delaware cultivation is a bit unusual; we only harvest 180 liters per 10 ares, so the grapes tend to lack the nutrients necessary for fermentation. When I mention this to other wineries, almost everyone is taken aback, asking what we're doing with such a small yield (laughs). One could say we're just poor grape growers, but we do put a lot of thought into it... Even after adding wine that was fermenting from 2024, the fermentation ultimately didn't progress, and we ended up bottling it as a slightly sweet wine. That's why we've sealed it with a crown cap. Please ensure this wine is not stored at cellar temperature for extended periods. Sweet hassaku orange, syrupy pineapple, apple pie. It has a good level of volatile acidity. It has an atmosphere similar to Andreas Tscheppe's blue dragonfly crown cap wines (though without quite the same potential). I believe it will improve further with another two years of aging. Personally, I'd like to pair it with fried oily fish. Also good with sweet and sour pork, kimchi hot pot, and richly flavored Italian dishes.
