White semi-sparkling wine, 750ml, crown cap, 9.5% alc, made from Delaware, Muscat Bailey A, Campbell Early, etc. from Kashiwara City, Osaka Prefecture, natural fermentation, chaptalized, no added sulfites.


This wine is made from grapes grown by Mr. Onishi, an experienced winemaker who trained with Kitani at Katashimo Winery.
In 2024, due to the challenging climate with intense summer heat, the Delaware grapes did not fully ripen, resulting in a lighter character. Therefore, we decided against making a single-varietal Delaware wine and opted for a blend with other varieties.
Although the black grapes were ripe, they were direct-pressed, producing a wine with a slightly pinkish white color, reminiscent of a Blanc de Noirs, with aromas of red berries.
After the initial fermentation was complete and the lees were lightly drawn off, the wine was chaptalized and bottled.

The sparkling process is not yet fully complete, so there is still a slight sweetness remaining (as of 2024/11/14).
Upon opening, there is a slight reduction, but this dissipates after a short time.

Aromas of satsuma orange, pineapple, ramune, red berries, and sake.
With a slight bitterness, medium acidity, and the complexity of multiple varieties, this is a wine you can easily finish in one evening with leftover snacks at home.

Pairs well with dishes like blanched napa cabbage.
