White wine, 750ml, 10.4% ABV, made with Shine Muscat grapes from Gojo City, Nara Prefecture, resin cork, no capsule, contains sulfites, no chaptalization, approximately 400 bottles produced. We use Shine Muscat grapes from Kawasaki Vineyard in Gojo City, Nara Prefecture. Although seedless, the grapes were late-harvested. We're starting to understand how to best process large-berried varieties. I feel that maximizing the deliciousness of the skins through hand de-stemming and semi-carbonic maceration is key. Based on comments from preliminary tastings with sommeliers: Aromas of muscat, lychee, rose, geraniol, freshness, salinity, yuzu, sweetness and freshness, black tea, pu-erh tea, jasmine tea, quince. "Drinks like juice, I want ice cream made from this." "I thought it was an Alsatian wine." "Pairs well with the second course of a Japanese kaiseki meal." "The aroma is pure Shine Muscat."
