Lightly sparkling white wine, 750ml, alc 10.8%, made with Koshu grapes from Minami Alps, Yamanashi Prefecture, crown cap, sulfites added, chaptalized, approx. 500 bottles produced.
This is a lightly sparkling white wine made from Koshu grapes grown by Keiko Mori, a grape farmer in Minami Alps City, Yamanashi Prefecture.
Keiko is a very energetic woman who moved from Chiba Prefecture to Minami Alps because she wanted to grow wine grapes.
She personally delivers the harvested grapes to the winery in Nara the very next day, so we are able to brew with very fresh fruit.
The grapes were destemmed and pressed at a 70% yield, then naturally fermented once, followed by in-bottle fermentation with Champagne yeast.
The aroma is refreshing with notes of citrus and apple.
On the palate, it has a pleasant balance and you can also taste the tannins characteristic of Koshu.
It pairs well with Japanese food, of course, but I think it's a very versatile wine.
