White wine, 750ml, alc 13.3%, Koshu from Minami-Alps City, Yamanashi Prefecture, synthetic cork (wax-sealed), with added sulfites, with added sugar, approx. 280 bottles produced This is a white wine made from Koshu grapes cultivated by Keiko Mori, who moved to Minami-Alps City and started growing grapes. Like Mr. Yano, she's also an immigrant who's eccentric enough to intentionally share her Koshu grapes with us in Nara (laughs). The grapes were harvested slightly earlier than Mr. Yano's, in a cooler region. However, we received excellent Koshu grapes with a good sugar content. 60% pressed, fermented at 6 degrees, and transferred to barrels during the later stages of fermentation. Aromas of ripe lemon, pear, apple, yogurt, honey, pineapple, rum, and smoky barrel notes. Slightly sweet, with a bitter finish that tightens the flavor. Strong aromatic volume and a tight acidity reminiscent of Puligny-Montrachet. Highly recommended with sushi and other Japanese cuisine.
